The crucial oil metabolites present in marine algae species include a mixture of distinctive chemical classes such as hydrocarbons, fatty acids, esters, alcohols, carboxylic acids, aldehydes, ketones, terpenes, polyphenols, furans, pyrazines, pyridines, halogenated amines, and sulphur compounds [1,2]. The production of algal EOs is closely connected towards the physiology in the species [11,12]. Studies on EOs of green and red algae primarily report the presence of monoterpenoids, halogenated compounds, and sulphur compounds that have a low impact on their aroma perception. In contrast to those species, brown algae is responsible for robust and pleasant marine odors (the so-called “beach note”), which is ordinarily related towards the presence of C11-hydrocarbons. Among other aroma compounds, these species contain a wide array of monoterpenoids and sesquiterpenoids [13].
